Fresh Orange Muesli

Easy to prepare and containing many essential nutrients.  This recipe will give a slow release of energy thoughout the morning helping to maintain your concentration and focus.  You can easily vary the taste by using different fruits and nuts. 

4 heaped tbsp porridge oats

5 fluid oz. oat, soy or other milk

3 tbsp natural yoghurt

1 grated apple - leave the skin on

Handful of pistachio nuts - roughly chopped

1 orange - zest of half orange, and then remove peel and all pith from the orange and cut into small segments

 

Soak the oats in the milk for a few hours or overnight.

Add the remaining ingredients and mix well, saving a few pistachio nuts and segments of orange to garnish before serving.
