Prawn, Avocado and Mango Salad
This salad is a great choice for lunch or a light supper dish. The fresh mango really compliments the richness of the avocado pear and the vibrant mint dressing.
180g cooked prawns
1 mango - stone and skin removed
1 avocado pear - stone and skin removed
Salad leaves and lemon slice to garnish
Whisk or mix the first 3 ingredients together.
Then add the freshly chopped mint and season to taste with black pepper.
3 tbsp. sunflower oil
1 tbsp. white wine vinegar
Juice of half lemon
1 tbsp. chopped fresh mint
Black pepper to taste
Prepare the dressing.
Thinly slice the mango and avocado pear.
Arrange these two ingredients on two plates along with the prawns.
Garnish with a few salad leaves and slice of lemon.
Serve with the mint dressing.
