This recipe needs a bit of planning as the oats needs soaking overnight, but it’s well worth the effort!

These quantities will make about 3 – 4 servings of delicious creamy muesli and the oat mix will keep well in the fridge for a couple of days.

Vary the fruit and nuts too add different taste, colours and textures.

90g porridge oats

1 tbsp flax seeds

300 ml soy milk

Zest one orange.

2 oranges - peeled and diced fruit.

3 tbsp natural yoghurt

2 handfuls of walnuts – chopped

2 tbsp fresh raspberries

Mix together the oats, flaxseeds, orange zest and soy milk and leave overnight in the fridge.

When you are ready to serve add the yoghurt to the oat mixture.

In serving bowls layer the oat mixture, chopped oranges, walnuts and raspberries.

An excellent hormone balancing breakfast which will help alleviate symptoms of menopause.

Soy milk and flaxseeds are good sources of phytoestrogens, essential fatty acids and protein.

Oranges and berries contain powerful antioxidants and act in a similar way to phytoestrogens.

Oats are a good source of protein and complex carbohydrates.  They are rich in B vitamins needed for energy production.
