Quinoa Porridge with Roasted Fresh Figs and Mixed Berries

What better way to start the day on a chilly winter’s morning than with a bowl of delicious and healthy porridge.

This meal will give a slow release of energy throughout the morning helping to maintain your concentration, focus and optimise energy production.

For two servings:

50g porridge oats

100ml milk of your choice

50g cooked quinoa

1/2 teaspoon grated nutmeg

Fresh figs – quartered and oven roasted (I used 1 fig per serving)

Handful of fresh mixed berries for each serving

1 teaspoon of pomegranate seeds for each serving

Honey to your taste

Place the porridge oats and milk in a small non-stick pan and slowly bring to a gentle simmer.

Cook for about 5 minutes, stirring continuously.  Add the cooked quinoa and stir in thoroughly until thick and creamy, adding more milk if required.  Add the grated nutmeg.

Pour into 2 serving bowls and top with the warm roasted figs, mixed berries and a few pomegranate seeds.

Drizzle with honey to taste.

Oats are a good source of protein and complex carbohydrates.  They are rich in B vitamins needed for energy production.

Quinoa is a complete protein containing all the essential amino acids.

Figs are high in fibre and contain good levels of calcium and potassium – both important minerals for bone health.

Fresh berries are colourful superfoods! They contain high levels of antiaging antioxidants including ellagic acid, they support the immune system, have excellent anti-inflammatory properties and are protective against heart disease.
